Tofu commonly comes packed in water. This leaves too much moisture in the tofu for most cooking techniques and recipes. To minimize the moisture content and firm up the tofu’s texture a bit a simple pressing technique works best. Note: this technique is for firm or extra firm tofu. Silken tofu has a very different texture.
