Tofu commonly comes packed in water. This leaves too much moisture in the tofu for most cooking techniques and recipes. To minimize the moisture content and firm up the tofu’s texture a bit a simple pressing technique works best. Note: this technique is for firm or extra firm tofu. Silken tofu has a very different texture.

Some people say there are two ways to melt chocolate: the right way with a double boiler and every other wrong way. While I won’t argue with someone who uses a double boiler to melt chocolate my preferred tool for melting chocolate is actually the microwave. Yeah I said it, the microwave, nuke that gearheads.
The easiest way to peel a clove of garlic is to smash the clove with the flat side of a chef’s knife or other heavy, broad object. Don’t be afraid to whack it pretty hard, garlic is a lot tougher than it looks. Smashing it with your knife will loosen the papery skin and allow you to pull it away easily.
